I found the recipe while surfing the web one day looking for pumpkin recipes. I later bought one of her cookbooks and found the same recipe inside! I was so happy!

I love pumpkin pie too Barb but I never make it because whenever I attempt to make pie crust it's a disaster. ;-(

We use pumpkin (fresh!) all the time here, but rarely in sweets. I plop a huge piece into minestrone (chopped fine of course), or in risotto, or pasta, or sliced and grilled... love love love it!

Gonna have to try the pumpkin muffins now!! Thanks Lee.

Do you use Crisco, Lee, or margarine? I've never tried, as I always use butter. I bet the consistency is a problem. You have to let it rest, wrapped in plastic wrap, in the fridge before you roll it.

What an interesting idea Hayes! I often add sweet potato or yams to soups and stews because I like the sweetness so I would imagine fresh pumpkin would be similar.

The last time I tried I'm sure I was using a vegetable based shortening. And I think I was also using whole wheat pastry flour. It kept cracking when I was rolling it out. If I try again, I will let it rest in the fridge as you suggest. Thanks!

When my daughter was younger I would boil a sweet potato along with the regular potatoes and mash them into "Halloween" potatoes! She didn't know I was being sneaky and adding some sweet potato into her spuds!

As for pie crust, Lee, I am an utter failure. I always overwork it and it ends up like crackers! *sob* My mother always took the leftover pie crust ends, rolled out, and topped them with cinnamon & sugar to bake as a treat for us! I still remember how good that tasted.

Cracking means it's too dry. Reduce the flour a little. You can always put more flour on the board when you are rolling it out. And when you mix the water in, use very cold or iced water.

Susanna - Censored by GoodReads (susannag) | 529 comments We stopped making pumpkin pie because the man of the house has trouble eating pie crust. So we make pumpkin custard, which turns out like pumpkin pie filling without the pie. Very tasty.

We usually grow our own pumpkins, but had a horrible crop last year.

Never made pumpkin muffins, but they sound tasty! Pumpkin bread rules.

Mmmm... pumpkin custard! I like that idea, but the Italians in my life probably not... I might have to turn that into pumpkin souffle'... I'll let you know how it turns out!

Hayes, it sounds like you are a wizard at pastry! I have a feeling I'm destined to fail with this particular challenge but I will give it a few more tries.

I like the sound of pumpkin custard too.

The food processor? Oh man, I have been trying to do it by hand with that funny pastry tool. No wonder it's always a disaster.

Naaa... that never works for me either!

Flour and shortening in the processor;
Whizz until it looks like corn meal (don't whizz too long, otherwise it heats up too much);
Dribble in the iced water and whizz some more until it makes big clumps;
Gather it all together and roll it into a ball;
Cover with plastic and put it in the fridge for 30 minutes;
Roll out.

Awesome! It sound waaaaaaaaay easier than what I was doing. That old school pastry cutter method is impossible or I just don't have the patience.

I'll let you know if I make a successful pie but it won't be soon cause I'm on a health kick.

I was thinking of baking those muffins today until I noticed how big the rhubarb in my garden is. I just pulled up a couple pounds -- it's rhubarb crisp tonight! My mouth is already watering!

When we first moved to Canada, our backyard had lots of wild rhubarb. My mother used to make rhubarb pie etc., until she realised that the dog was using the rhubarb as his own private fire hydrant (I hope I didn't gross anyone out, but it's a funny childhood memory).

Good morning Christine! I hope everyone else finds the thread this morning. Thankfully, Lee organized on Thursday night, rather than Sunday. :)

We got a big thunderstorm last night, one really loud "boom" woke us up! I must have been tired cuz that's all I remember. Maybe it was a really small cloud. :)

Thanks, Jeannette! I hope your kitties' vet visit goes well too. Anya won't be too happy either. I'll have to trick her to catch her. She always seems to know when it's time to go because she'll try and hide.

I'll catch mine, even if I have to pull them out from under the sofa! But, the black cat had a rather traumatic visit years ago (a very unkind vet), and he turns into "cougar" cat at the vet's office, snarling and drooling. Then he will beat up his brother the rest of the day because of it. It's only once a year shots. I don't know how we would all handle regular treatments like you have to. :(

I love a good storm, but it's not worth it for me. Benjamin is terrified of lightning, and weather is one of his obsessions and triggers. And Dixie hates storms. Not. Worth. It.

With that said, my grass could really use some rain (don't tell boy or dog that I said that).

If I try to take her outside and she hears even a distant rumble of thunder, she pulls me back to the door and inside. So, your son is scared, too? Are you able to distract him any or does he focus on the storm until it passes? Having a child terrified must be very challenging.

Oh Barb, that would be so great, to be in the country on a big covered porch while it rains and storms. So cool! Hayes, I love the grandpa moving the piano explanation. LOL!

Jeannette and Wendy, good luck at the vets. Hope your little critters aren't too traumatized.

It's funny how animals will always remember a bad vet experience, but who can blame them? And, we are very much the same, especially when it comes to dentists. Well, I hope that Anaya's blood count is good today, Wendy, and, Jeannette, hopefully your black cat will not be in too foul a mood (for everyone's sake). We haven't had any thunderstorms yet this year, but I'm glad I'm living in Ontario and not Alberta; Calgary actually had a snowstorm yesterday (not too unusual, Alberta weather can be unpredictable, they've had snowstorms in June and August as well).

Yeah, it's always been one of his autism quirks. He was to the point of checking the weather channels/websites about every 10-15 minutes all day (I'm not kidding) until his therapist told me to limit him to twice a day. That almost killed him on the spot.

And I'm sure if Dixie could work the remote, she would watch the weather channel all day. ;)
It's a wonder how she can blog with those paws, but not work the television.

Well I can certainly understand that storms are a source of stress for you and yours. I hope you don't have too many where you live.

We have some big thunderstorms in Iowa -- I think the center of the continent gets the best ones! Where does your aunt live, Barb? We had some really big ones in Mississippi, too.

The black cat is afraid of people, in general, and our former vet would not let me get him out of the crate by removing the top. She said "I'll get him out!" and she hauled him out by the hips. He threw up on the way home and he drooled and twitched for 3 hours! It was horrible. That's when I switched vets and she works with me to make it easier on him. Today went pretty well! Not too much drool or growling and minimal hissing!

Oy. A vet who doesn't like animals is in the wrong profession!

When we got a cat and needed a vet, we asked a colleague of my mother's who has a lot of cats for advice, and she sent us to Dr. Wiggers, who is wonderful.

That's a great name, period!

We go to Dr. Tammy, who is closer to a rural vet than some of the vets here "in town." She's happy to examine the dog on the floor, too, because he doesn't like being up on the table.
