in my opinion you can read WaT after Rhythm of War, but only important thing is to not read sunlit man before it
I read Sunlit Man before Wind and Truth (it hasn't been released then) and it is still enjoyable. I'm not still quite sure if I prefer it or not, but publication order is an option I usually like. Enjoy :)
I think you can read Wind and Truth after you read The Sunlight Man. You will still understand who the main character is, and other things, and it will all come together in Wind and Truth.

That being said, the only pieces I don't have a solid position for is Wind and Truth, and the Sixth of Dusk. The latter I believe I can put pretty much anywhere before Rhythm of War, but for the 5th SA book, I've seen it put after the Mistborn Era 2 as well as immediately following 4, and occasionally following the secret projects (other than sunlit man which is later).
Anywho, here is my reading order. I'm open to suggestions, but I'm mostly just looking for "correct" placement of Wind and Truth. I also put the other secret projects in what I felt were more comfortable locations, instead of all crammed at the end like most lists show.
