I need to replace old books on my dashboard with updated book covers Same title. How can I just remove and add back the updated books and covers in Amazon

We don't remove them. Depending on the format, you would either add a new edition, or ask use to replace the cover (Kindle). Link to the specific editions and we can help you more.
