SOLVED. Children's Picture Book about a donkey (or mule or horse) that gets married and eats ice cream. [s]

I remember reading this book at my grandmother's house in the late 1990s/early 2000s, but it was almost certainly older than that (I would guess 1970s or 1960s). It was about an animal, which I think was a donkey--but could have been a mule or a horse--and his life. I remember him living with a nice (human) family, but he might not have started with them.

The part that I remember most is that the animal gets married and the whole family celebrates with him. Both donkeys (?) eat ice cream, but then the bride donkey gets sick. I think it ends up with her being pregnant, but I'm not sure.

I'm also not sure, but I remember the book being white, with illustrations that didn't take up the entire page. I appreciate any help/tips that anyone can give me! My grandmother died a few years ago and no one else in my family seems to remember anything about this book.
