No clue what the title or full storyline is as I read it when I was very young, but I just remember a book that was either a children’s or maybe (unlikely) middle grade but that had some pictures. I vividly remember a full colour page, or maybe the cover, with a boat that had some kids in it, on a sea that had jell-o(?) fish or octopus jumping out of it.

No, don’t think any parents were in the book. Definitely lower grade than some of the suggestions on that thread as well, and much more centred on the ocean.
What country were you in when you read this book?Do you remember anything about the main character? Male or female? Age?

New Zealand, and i don't remember there being a specific main character, just a few children.
Would you say it was a child's novel, like at least 100 pages long?
