Old odd children’s book with weird creatures and/or monsters three-legged pie eater

I remembered this old, strange picture book from my childhood. (The 2000’s- book could easily be older)
It had sketchy, almost natural science type illustrations with limited color, and was all about weird creatures or monsters.
One was a bizarre thing called something like “the three-legged pie eater”- it had a pie shaped head and multiple long legs.

I don’t recall much else, but maybe such a weird design is enough to go on?

Creature might have been “pogo jumping” or “pogo hopping pie eater”?
Still don’t remember much.
