YA book from the 2000s about a girl who meets an immortal man it's interactive and has parts that come out like sketches

This book had parts you could remove like maps and drawings etc it was about a girl who was an artist and like to draw people as she imagined they would look as older people and she meets a man who she later finds out is immortal and used to fly planes. Does anyone recognise this description?
