It has the mud-coloured eyes you remember:
Her brown eyes reminded Jamie of mud.

I can't recall the title or author but I remember the story very well. The main character's family was traveling in a wagon train heading west (think gold rush era) and there was another family with 2 daughters. MC was in love with the older daughter because of her green (or possibly blue, that detail escapes me) eyes. The younger sister loved MC but he didn't have any feelings for her because her eyes were brown 'the color of mud'.
Anyway, somehow MC ends up separated from everyone else and ends up with a native American tribe. I'm a little fuzzy on why and how it happens but basically he gets cursed as something similar to a werewolf in a 'man by day, beast by night' sort of thing. I did a bit of searching elsewhere and came across someone searching for the same book that said something about an amulet that the MC's mother gave him? Maybe the amulet was cursed or something, I don't remember that at all but other details they were mentioning are the same so we're definitely looking for the same book.
That aside, I seem to recall reading that he can never let his true love see him in his beast form or he'll become a wolf for good or something along those lines. He stays with the tribe for a time and falls for one of the tribeswomen but iirc she sees him in his wolf shape (or he thinks she does/almost does) and he attacks her and leaves the tribe eventually making his way to the settlement where his family is and reuniting with them and the family with the 2 sisters.
Again, some details are fuzzy but I think the sister he was in love with had gotten married? I don't remember exactly but that seems right. Anyway, I think he sees the sister he's in love with asleep (he may have been in her house but I have no idea why or how, lol) and she starts to wake up and he attacks her because he's afraid she'll see him. I don't remember if he escapes that night or if this happens as he's escaping but the younger sister (with the mud colored eyes) traps him in a cage. She knew about the curse/amulet somehow (whether he told her or she learned about it some other way I can't recall) but the book ends with her saying something along the lines of 'now you'll be mine forever' because he's now trapped in the body of a wolf and she intends to keep him as a pet I guess?
