Fiction about a talking pig that i read in 2011

I only remember how the pig could talk because these doctors/ scientists experimented on it to harvest its organs or spine to save their son, but it wanted to live a life and eat risotto by the beach with a girl who helped him run away. I've tried to find it but I can't and its starting to feel like a fever dream.
