The second one sounds like Ray Bradbury's The Fox and the Forest, also published under the title "To the Future."
And both "The Fox and The Forest" and "Button, Button" were in 2001 and Beyond: Science Fiction Stories 2001 And Beyond: Science Fiction Stories from 1975. Here's a list of other stories in that book

That's preciesly the book I was looking for. The "2001" threw me off at first I ended up looking for Arthur C. Clarke's Space Odyssey. Thanks again for your help Andy, you're a legend.

I vivdly remember three of the short stories (There is a very slim chance they weren't all from the same anthology).
The first was about woman visited by a travelling salesman who offers a switch that kills one person whom she doesn't know for some gain that I don't remember.
Another was about a time travelling couple who spend their "vacation" in a small town festival before being traced by time agents (not sure how this one ends).
There was also one with a boy whom after losing all his loved ones to war decides to never love again until he finds a place where no man made weapons will ever find him, which takes him to a solitary man living on the moon.
I may have messed up the description to some of these, the whole book felt like a hazy dream at the time, but I would really love to read it again so any help is incredibly appreciated.
