About how many pages long was the book?Did you read it in the UK?
I read it in the UK. Maybe 50ish pages? most of each page was illustrations.
I think I remembered a bit more about the fruit hat story. I think the hippo (or other animal) has got this new hat to wear to a party/carnival and is very vain about it. Different animals come and take pieces of fruit off of it to help prepare for the party- cherries to decorate the cake, coconuts for a coconut shy, that sort of thing? And so by the time the party happens there’s nothing left on the hat, and it looks plain and boring, but then she has such a fun time at the party it doesn’t matter? Not 100% sure but I think it’s along those lines.
Could it be one of the George and Martha books by James Marshall?

I Can Read Stories looks like it may be a compilation of the jungle animal stories? I think I see a red drum on the cover!

I think the same animals may appear in each story.
The one I remember most clearly is a vain hippopotamus with a carmen Miranda style hat made out of lots of different fruit. I think one or several other animals keep taking fruit from her hat until there is none left.
Another story may involve a very noisy drum?
I think there was a monkey, a lion and an elephant possibly?
The illustration style was very bright, colourful and cartoony. The book was square-ish and hardcover.
I would have had it between 1994-2000, but it may have been secondhand so could be a bit older. It did seem in a 90s-00s style though.
