In Rudyard's Kipling's
Just So Stories is the story "How the First Letter was Written."

Another similar book I had is
How the Whale Became
but those are just animal stories.

There is also Stories for Eight Year Olds which at first glance I thought could be it. It has a story "The Magic Fishbone", but it's a different story, not about the creation of Hawaii.

There were a range of such books, "Stories for Seven Year Olds", etc yet I can only definitely say I had the one for Eight Year Olds and the story I'm looking for was not within it, despite remembering the other ones.
Those are a few examples of the kind of books I had and it was such a book.

It might be that one but I don't recognise any of the other stories so it's doubtful. 1995 is still within the timeframe of me having read it.
I'm having second thoughts about the islands being the Hawaii islands too now. It may have been the Aleutian Islands, and there seems to be creation myths associated with them.
