I wanted to add some works by a favorite author from the 60s/70s whose work isn't listed, but at least one of his books was only published in a magazine and never was released as a standalone title. Would I be able to list this, and if so, how?

No, if a story was only published in an anthology or magazine and never on its own, it isn't allowed by itself per Goodreads policy.

If a magazine has an ISBN or Kindle ASIN for a specific issue, then it would be allowed. Most magazines have ISSNs or nothing at all.
