The one I deleted just said something like "I added the language code" or similar but having the text in the log would give a better audit trail.

We've looked into this a bit, and it is consistent with how librarian logs work in general. "Changed" followed by no text indicates deleted. The text that was deleted is visible in the logged note from when it was added.
If the note is edited instead of deleted, it will show as "changed" followed by the new text.
