Okay, so I read this book when I was in late middle school, which would put it somewhere between 2009 to 2011. This was a YA retelling/book inspired by the Wizard of Oz. The main character (who I think was a girl, but honestly I don't even remember) ends up in Oz and relatively early on they are trapped in a castle or a some other place with a large kitchen and they're told to cut the eyes out of a whole mountain of potatoes - but when they take the knife to cut out the eyes, they're not, like, potato eyes but real eyes that blink.

I cannot for the life of me find anything about this or remember anything besides sitting at a table and reading this scene in my middle school library!
