So, if i gonna add a new chinese book, how am i supposted to do with the sort by title?

In chinese, we don't have "A," "An," and "The" issue. Should i just copy from the chinese title such as "瓦尔登湖" instead?

Yes. The 'sort by title' field is specifically to make sure that titles are sorted correctly, and without articles (a, an, the in English) that is on the first word.

I was referring to the foreign texts that aren't in English, such as your example.
