I have found it! "The Bumper book of ghost stories" by Mary Danby

Sadly the information on Goodreads is incorrect regarding the contents of the book, the edition with the ISBN 0006940358 contains totally different stories. I have however found a copy on Ebay with the red cover I seem to remember and hopefully it is the same edition from my childhood!
It featured a story about a boy who met the ghost of his twin in the woods on his birthday, another story was about a ghost boy called Simon who still attended school and sat at the desk he had before he died. Another story I remember was about a ghost girl who visited a house of children and they offered her heinz beans and when she left there were no footprints in the snow. Another story I remember was about a girl with amnesia who was looking out of the window and as she did so she remembered she was dead from falling out of the window. I also remember a story about a little girl talking to her mummy on the phone about the man at the window who was very charming and asking to be let in. He was a vampire. If anyone has any idea on the title I would be very grateful!
