This could be a tough one. I only found three on my TBR list:

The Penguin Mini Modern Classics (https://www.goodreads.com/list/show/2...), Art of the Novella series (https://www.goodreads.com/list/show/2...) and most books published by Persephone (https://www.goodreads.com/list/show/2...) would work for this prompt as well.
This is great for me, since I absolutely have to read Big Wonderful Thing: A History of Texas for work and was dreading figuring out how to fit a 900+ page book into next year's challenge.

Oh, Swing Time would be great for this for me as it’s one of the few Zadie Smith books I haven’t read yet.I may also use Know My Name by Chanel Miller. UK cover just has black and white with text.

Would Exhalation: Stories count? The words are a bit of a flourish, but there aren't any images or graphics.
So, if you've got any old hardbacks that lost their dust jackets, you could probably use those lol. I know I have a few...

@Tobey- I’m actually listening to that one now and loving it! I’ll have to see if the sequel would work for this option also.
I'm using several of the books from the Stephanie Plum series for prompts next year (I stopped at 18, so I have some catching up to do) and I realized that a lot of the books in that series fit this prompt:
I just borrowed the ebook of Lanny from the library, and realized its text-only, so I’m going to borrow it again to read in 2020.
(I thought that white line was a tree or a sprout, but it’s nothing, not even what I would consider a graphic.)
Alternatively, I’m already planning to read W is for Wasted for “>20 books in a series,” so I could just carry on and read X
or Y is for Yesterday
or use

If anyone wants to read older books this year (such as those in the public domain), you can often find ebooks (usually free) on Amazon with text only covers. I have several in my Kindle library and will probably go that route.
Looking through the Listopia, I found a lot of books that I've read and loved! For this one, I think I'll do Swing Time
