I wasn't having any luck searching with the key word "pegasus" so I switched to "flying horse" and I found a book that might fit your description. It doesn't seem like an exact match but just in case...Airs Beneath the Moon by Toby Bishop (published in 2006).

A girl lives in a world where everyone lives on floating islands, the more wealthy people own Pegasus, but the main characters family is kinda poor and own a farm so they only own Pegasus cows that produce flavored milk depending on what kind of plants they eat (I remember that the family really wanted these cows to make peppermint milk because it’s sold well but they couldn’t afford peppermint plants so their cows only made clover milk) so the main girl gets a Pegasus (through magical means I’m pretty sure) and she has to train it and enter it into a contest (I think so she can get money to save her family’s farm)
Any help would be greatly appreciated! (Also I think the book had a pink cover of that helps at all)
