Any of the classics like Ruth Park (Harp in the South Trilogy), Definately The Silver Brumby series, and a few more already mentioned above.

I loved the Silver Brumby books! In fact, I just recommended them to a small person of my acquaintance who loves horses.

I would also recommend Jane Harper's novels — The Dry, Force of Nature and The Lost Man. They are set in country or outback Australia, and really capture life in those environments. I'm currently reading The Lost Man, and I'm in awe of the way Harper captures the harshness of outback life.
