   If it's very salty, they would float (think the Dead Sea). If people are worried about their salt intake and go for the low-salt variety, then you might be in trouble unless it's very thick and gooey. (;>)

 Dead bodies float in the sea (gas inside) and have to be weighted down to keep them down. In an industrial sized vat perhaps they could be rammed to the bottom and it might be more difficult for them to float to the very top and be seen. If you don't want the body to be seen, you could make the pickle very thick.

 Or, since it's science fiction, have it be Arcturan pickle relish, which everyone knows is so light that even a helium balloon would have trouble staying afloat in it.
