Possibly Coco Caramel by Cathy Cassidy? It's part of the Chocolate Box Girls series, about a bunch of sisters whose dad runs a chocolate business (not quite a bakery, but perhaps similar enough?) Coco is the youngest sister and in this book she and a boy called Lawrie try to rescue a pony who's going to be sold to a horrible new owner.
