The book is part of a vampire romance book series. The setting is a large modern day America city, I think New York. Vampires are out of hiding and are seen as celebrities. When they want to turn someone, a contest form has to be singed by the one that wants to be turned.
In the book, I think the grandma - who is dead - made a deal with a vampire that he would turn the granddaughter. She doesn't know about this and would never have consented to be turned into a vampire. So they fake her signature and turn her without her knowledge (I think)...
But then when she is a vampire, she is way more powerful than she should be, has the power of a much, much older vampire and purple eyes (I think).
Our heroine has weird dreams and a painting of a battlefield. Turns out that this is a painting of a battle her husband of centuries ago fought in.
In the book series we find out that she has/is the reincarnated soul of the dead wife of the master vampire who turned her. Turns out, when her husband fought in battle long ago, she was left at home. She was also pregnant. A bad vampire turned her because he wanted revenge on her husband and her pregnant belly was frozen for centuries. Ande she was tortured for all those years until she found a way to end her life.
So now she is our heroine and slowly gets her memories back. She ends up with her husband, the vampire who turned her, and finds out her grandma was some sort of witch? I think our heroine was also empathic and quite powerful. She could feel someone die across the city.
