You simply can't beat going into an old-fashioned Coffee Shop where they display and sell all the different kinds of Beans - the smell is just fantastic!

suzysunshine7 | 16038 comments My Mum will sometimes buy something in-store that I have already bought online - and so we recently ended up with having two large bags of Frozen Garden Peas in Freezer.

I found this very simple Recipe in an old Cookbook, made it up early on this morning for a lovely light Lunch, and we absolutely loved it ;o> ...

Pea & Mint Soup - serves 3 - 4

I large Onion, chopped // 200g Potatoes, peeled & chopped // 2 Garlic Cloves, peeled // 1.3 litres boiling hot Vegetable Stock // 400g Frozen Garden Peas // 10g fresh Mint // Salt & Black Pepper to taste

Put Onion into large Pan with Potatoes, Garlic & Stock - and bring to boil. Turn heat down and simmer for 20 mins or until Potatoes are very soft. Add Peas to Soup and simmer for couple of mins then add Mint.

Take off heat, allow to cool slightly, then blitz (until smooth enough for your liking) with Stick Blender or use a Food Processor. Season to taste, serve, and ENJOY!!! ;o>

Helen The Melon | 3422 comments Green pea & mint soup is one of my favourites to makes, nice and quick & v tasty. I make mine with spring onions instead of normal onions & no potatoes. (Also, no garlic in mine, can't stand it. Yuk).

Also have a recipe for courgette & mint soup which is nice when the weather is warmer.

suzysunshine7 | 16038 comments We don't often have Spring Onions as they invariably tend to languish unused in the Fridge until they have reached the point of no return. My Dad also dislikes Garlic, but I do like it now and then, and I wanted to use some up and so I sneaked it in ;o>

I also used up some Parsley (not a thing that I like) with the Mint as well.

You're in luck - so far, only two have been eaten.
One for the purposes of Quality Control, and the other because a second opinion was needed :)

One sausage roll placed on the 'reserved' plate, for later.

Has the weather been playing havoc with your attempting to sleep then?
Last week was absolute murder for me, trying to get to sleep in the late afternoon with temperatures in the low thirties, but especially so on Friday when we had a power cut. I think I was just on the verge of going into a nice deep sleep when I heard the fan cut out. A bleary glance around showed that the alarm clock was blank which is how I realised the power was out so I had to get my phone from downstairs and set the alarm on that.
Fortunately the power was back on when I got up, as getting ready for work in the dark would have been challenging :)
The power has gone out about half a dozen times over the weekend for some unknown reason, according to Mrs Grizzly - Friday I can understand due to the thunderstorms but we've had no more thunder since Friday.

I wonder what is causing all of your Power Cuts? ;oO

EDIT : Just Googled and apparently parts of Peterborough were affected by a fault occurring on an Underground Electricity Cable on the 28th - and then they had to turn off power in your area several times so that Engineers could safely carry out emergency repairs to the Network.

Not the happiest of times here at the moment either - we've just passed a date that we'd rather not have to remember.

I hope that things soon start to get better for you :)

Don't know what's causing these power cuts but, on the bright side, it'll help keep the bills down, won't it? :)

Of course I don't mind, just give me a few mins, Suzy. I find that it's more of a "summer weight" soup than a "winter weight" soup 😁 . It's quite light and fresh.

Helen The Melon | 3422 comments COURGETTE AND MINT SOUP - Serves 4

50g (2oz) butter
1 onion, chopped
750g (1½ lb) courgettes, diced
600ml (1 pint) chicken (or veg) stock
2-3 tablespoons chopped fresh mint

1) Melt butter in large saucepan over a low heat. Add onion and cook for 5-10 mins until softened.
2) Stir in the courgettes and cook for a further 10 mins until tender.
3) Add the stock and mint. Bring to the boil and then simmer for 5 mins.
4) Whizz in a blender until completely puréed. Season to taste and serve.

Nice and quick and easy! It's another "no faff" soup 😁
You could use 1-2 tablespoons of oil instead of the butter if you prefer.
I usually add a potato or two too to make it a little thicker.

My Dad is being rather difficult over Meals at the moment - he often really really wants something but ... by the time you have gone shopping, bought it, prepped it, cooked it, and served it up ... he has changed his Mind and wants something else instead!

He is always rather partial to Soups though - and I want to try to keep things different so that they continue to stay a pleasant and interesting option for him ;o>

It'd have a very lengthy list of ingredients, including several obscure ones, and would take all day to make, involving lots of different preparation & cooking methods. It would then have to be passed through a sieve several times to make sure it was super smooth, rested overnight for the full flavour to develop before being reheated. Or something like that. ;-)

Granny | 93 comments Sorry for my absence. This has been an unruly summer. We had someone leave at work. We've had vacations and multiple sick leaves. I'm off because my husband had neck surgery and is in ICU . They keep folks intubated for a couple od days now afterwards in case of swelling and airway impingement. He's very claustrophobic and is restless even with two kinds of sedation. His last neck op was different. Extubated after the surgery and monitored. Someone recently had a bad time after the op and required emergency re-intubation which is never good. So tubed he stays until tomorrow. He's startingly aware even being double-tapped with propophol and Versed. He should be oblivious but will nod or shake his head and tries to cough out the tube. He's setting sedation records which is not good. His hands are restrained otherwise he'd extubate himself and do an injury.
I celebrated chocolate day with some nice Hershey nuggets. And cocoa in my coffee. And ice cream.
So far, being on medical leave both for my op and hubby's are my only vacations this year. Woohoo.
I do hope everyone is well and enjoying their summers.

Best wishes to hubby and let's hope he manages to keep his hands to himself!

My wife had to have a tube passed through nose for oesophageal monitoring and kept in place for 24 hours yesterday. That wasn't pleasant, either. The worst bit about the procedure was she had to stop her medication about a week before. It was removed this morning and only then could she resume with meds.

Hope you manage to find some time to update us with progress.

A lot of us on here seem to be going through various kinds of deeply personal and private agonies at the moment with our closest and most dearly loved ones and/or are continuing to keep on with valiantly fighting the good fight in battling against serious health issues - but, with every hour that passes, may we always stay strong and rise up to all of our challenges and still choose to hope for and to believe in, that any day now, it will all be onwards and upwards for us all towards times of good health and of great joy and happiness once more ... ;o> ... ;o> ... ;o>

We have a fairly big pond which was originally home to daughter and s-in-l's koi carp, now re-homed. Last summer, we bought three goldfish and three shubunkin, losing one of each to last winter's freeze. Much to our surprise (they weren't large), we now have at least twenty babies of both kinds, which is lovely, they're such fun to watch. Only worry, if the frisky little things get up to the same next year, how long before the pond is overcrowded? and what to do with the over population?

Well, I guess you have a year to think about and to make plans for the possibility of overcrowding? - and maybe during that time you will find someone with a similar Pond set-up who would love to take some extra Fish off you?

From what I understand, Goldfish will spawn several times a season if the water temperature is really warm - and so the larger than anticipated number of babies that you have now might be down to the extremely hot temperatures that we have had this Summer?

If next Summer is a much cooler one then it may not become an issue? ;o>
