Hmmm? - I've never actually Deep Fried anything, Martin? ... and I'm not too sure I would ever want to either as I have a bit of fear thing going on whenever it comes to Chip Pans and Deep Fat Fryers.

I don't think that Cauliflower as Pizza Base is going to be a winner for me as, when I want Pizza, I really do want Pizza - Bread base and all?

However, I definitely do like the sound of the Cauliflower Omelette (Persian Kookoo) Recipe very much indeed and I think that we will be giving that a try out for Lunch on Monday.

Martin O' | 2196 comments I'd go along with that Suzy, we often have it mixed with macaroni amd sometimes with broccoli. I've also recently come up with an omelette variation using rosemary and chives with mushrooms, Sainsbury do a range of fresh herbs that I have been experimenting with.

PUMPKIN, CAULIFLOWER & LENTIL CURRY

0:10 Prep
0:30 Cook
4 Servings

Ingredients

1 tablespoon olive oil
1 brown onion, finely chopped
3 tablespoons mild curry paste
12 fresh curry leaves
1 tablespoon finely grated ginger
400g can diced tomatoes
1 1/2 cups (375ml) water or vegetable liquid stock
1/2 cup (105g) brown lentils, rinsed
1/2 cup (115g) red lentils, rinsed
600g butternut pumpkin, seeded, peeled, cut into 3cm pieces
1/2 (about 600g) cauliflower, cut into florets
1 cup (150g) frozen peas
1/4 cup (60ml) cream
Coriander leaves, to serve
Steamed basmati rice, to serve
Naan bread, to serve

Method

Step 1
Heat oil in a large saucepan over medium heat. Add onion and cook, stirring, for 3 minutes or until onion softens. Add curry paste, curry leaves and ginger and cook, stirring, for 1 minute or until aromatic. Add tomatoes and water and bring to a simmer.

Step 2
Add combined lentils and cook, stirring occasionally, for 15 minutes or until lentils are almost tender. Add the pumpkin and cauliflower and cook, stirring occasionally, for a further 10 minutes or until pumpkin is tender. Add peas and cream and stir to combine. Remove from heat. Taste and season with salt and pepper.

Step 3
Spoon curry among serving bowls and sprinkle with coriander. Serve with steamed rice and naan bread, if desired.

You could always take a short cut and use a tinned lentils and substitute the red lentils with tinned chick peas.

Cauliflower Leek Puree

1 head of cauliflower
1 large leek
3 tablespoons cream
Butter, salt, pepper to taste

Chop florets and leek. Boil for about 15 minutes until very tender. Drain VERY well. Place in food processor with cream, a few pats of butter and season with salt and pepper.

I thought I would experiment, if the hot weather doesn't zap too much of my energy to try to do so, rather than just use the Cauliflowers up in all of our more usual ways.

M&D can quite happily eat the same kinds of Meal every day for weeks at a time - but I think it's nice to shake things up now and then, keep them interesting, and I have gradually managed to add several new dishes to our usual family favourites over the last few years ;o>

suzysunshine7 | 16038 comments I love my Steak Medium Rare but I expect for it to be cooked in texture - just pinky-red in colour in the middle and oozing with still slightly bloody meat juices - and definitely not raw in texture and oozing pure blood.

Helen The Melon | 3422 comments Suzy, guess what I had for lunch yesterday and Fri? Yep, cauliflower soup. And guess what I have just had for lunch today? Yep, cauliflower cheese. 😁
I make my cauli soup with a hint of ground coriander and lemon zest. Sounds a bit odd but it's a v delicate flavour, yum.

Cauliflower Cheese? - yeah I am definitely some kind of addict! If we go out for a meal and it is ever available on the Menu (which sadly is not that often) then we simply HAVE to have it. And if we go for a Carvery Meal then my Plate has some Meat, a few Roasties and a massive helping of Cauliflower Cheese on it! - LOL!!! ;o>

Give me a few mins and I'll find the recipe......

CAULIFLOWER & CORIANDER SOUP
Serves 4-6

2 tablespoons olive oil
1 large onion, chopped
1 medium cauliflower, cut into florets
Zest of 1 lemon
1 teaspoon ground coriander
1 litre hot veg or chicken stock

1. Heat oil in large deep pan and gently fry the onion for 10 mins until softened.
2. Add the cauliflower, lemon zest and ground coriander and stir well. Cook for 2 mins and then pour in the stock and bring to the boil. Then simmer for 10 mins until the cauliflower is tender.
3. Whizz the soup until smooth and season with salt & pepper if desired. Serve.

Slim pickings here today - I found a neglected pack of mince in the freezer so that's been mixed with diced carrot, sweet potato and onion, had some gravy granules added and been chucked in dishes and topped with the last of a sheet of puff pastry. Mine is in the oven now and will be served with peas and sweetcorn.
Other than ice cubes, there is now only frozen peas and sweetcorn in the freezer and about a pint of milk, a pot of yoghurt and half a dozen strawberries in the fridge. I'd best do some shopping when I finish work tomorrow morning :)

I do carrot and coriander sometimes but my sis can’t stand coriander in any form.

suzysunshine7 | 16038 comments When I was a little girl, I often used to go and play with the little girl who used to live next-door - and her Mum would sit all the Kids together in her Kitchen, put a huge Serving Bowl of freshly cooked Peas and Sweetcorn (with knobs of melting Butter on top and seasoned with Black Pepper) in the middle of the Table, and then give us a big Spoon each so that we could all dig in.

Ahhh, more lovely memories of such happy carefree days ;o>

I've never been all that keen on Carrot and Coriander? I find the intensity of the Carrot and the sweetness that comes through to be far too much for me - I only really like lightly steamed Carrots and will occasionally grate one as part of a Sandwich filling or to go into a Mixed Salad.

Our utterly M&S obsessed Neighbour will occasionally bring around a bag of Chantenay Carrots for us all, just like it is some kind of a big treat. We always graciously accept but never eat them as unfortunately none of us like them. They are just far too sweet in their flavour even for my M&D.

We used to try to pass them on or put them in the Compost Bin but now our local Supermarkets have Trolleys set up for Food Bank donations we put them in there instead - as they get emptied every other day so any donated Fresh Produce will not go off ;o>

Nah, they are an older couple (in their mid 80's now), no children, extremely well-off financially, and rather refined and particular and ever-so-slightly awkward and a little eccentric in their ways.

They genuinely just think that they are sharing with and treating us. They have gifted M&D cardboard crates of various Wines for over 20 years now - all of them specially chosen by them with each of us in mind ... and yet I don't like Wine and my M&D rarely ever drink any kind of alcohol at all simply from choice as well as because of Health reasons - and M&D really should have politely said something about this and yet they never have?!

Instead, my Mum saves it all up (we get Wine for Christmas, Easter, Birthdays and Anniversaries) until we end up with around 40 Bottles all squeezed up inside the Priory Dresser Cupboards by the end of each year. M&D sneak the lot out into the Car on the Driveway when next-door are out somewhere and then take it all around the various local Charities that we support so that they can use them as individual or Gift Hamper Raffle Prizes ;o>

Lez | 7490 comments Anyone like butternut squash? I don't like it as a veg but my sis makes yummy soup:

I onion finely chopped
I large squash - no need to peel, just remove seeds and chop into pieces.
Put in pan with about a litre (depends on size of squash) of veg stock and add a can of chick peas complete with liquid. Boil and simmer till soft, then blitz it.
Serves 3-4

I've now eaten cauliflower 6 days in a row, so tomorrow will be a cauli-free day for me too!

Lez - I like butternut squash but have never had it combined with chickpeas as soup. I make my butternut squash soup with a red pepper in it. Might give the chickpea version a go sometime.
