I don't know if this quite fits what you are looking for, but in Sharon Shinn's Twelve Houses series, there are magic-makers who have the ability to alter their own shape as well as that of inanimate objects. They can turn cotton shirts into satin gowns, wood branches into metal swords. The first books is Mystic and Rider.
Pretty much all Rick Riordan books cover that specification ecept they are not fairytales more Gods/Demigods
I would recommend the Lightning Thief series by Rick Riordan. The metamorphosis is a ballpoint pen turns into a sword.
I'm not sure how you want transformations to be "metaphorical," but here are some fabulous reads:Shield of Stars, The Sword of Waters, and Crown of Earth
Also, Holly Black's series White Cat isn't based on any established fairy tale, but it has the modern-day feel of one.
I also like The Golden Apple and The Silver Pear.

Maggie Stiefvater's Raven Cycle series. There are tons of weird shit going on in this series that fit with your description, but I can't be more specific without spoilers

For example, in Crimson Bound, a sewing needle becomes a sword. In Uprooted, the main character tosses stalks of grass into a river which turn into a boat. In multiple Baba Yaga stories, a girl tosses a comb which springs up a forest.
