Book with picture from cut Jaws scene

A few years ago on IMDB someone posted a photo of a deleted scene from Jaws that showed Quint cutting up a killer whale in his boathouse. It was in a book about movies, but the poster never mentioned what the title was. He did say that it was an older book. Anyone know what the title is?
