I read My Ántonia for option 1B (it's all about the Bohemian family, and on immigrant experience list).
For book 2.... We first meet them getting off the train when they arrive at their final destination on the Great Plains. Can I use train on the basis that it was part of their travel, or should I just play safe with boat?

I think you should stick with the boat. That is how they actually came to this country. Otherwise it becomes a bit of a slippery slope - what if they rode in a car to the port, took a taxi from the train, etc.

By the way, my parents traveled by train from NYC to Chicago when they emigrated here. And thanks for the book suggestion, I've added it to my TBR list.
