I read this paperback sometime between 1975 and 1985. It was a novel written in English with gradually more and more French. It is about a young boy sent to stay with relatives in France. He begins without knowing any French, and gradually over the summer in his interactions with other characters and in letters home he learns and displays more of the language. I thought the title was Par Avion, but many searches have failed. One adventure I remember him having was helping a man who was truffle hunting with a pig. Thanks for any suggestions!

This sounds like The Avion My Uncle Flew.

I don't remember the truffle hunting, but it is about a boy who goes to a small French town instead of a ranch in Wyoming.
