The cover is a depiction of the lead character and the cat-like beast. character was human-like, but not a human. I think it was in 1st person, but I do not remember the plot or if there was magic.

I feel like I ought to be able to think of others that would also fit but nothing else is coming to mind right now.
It was a male non-human, but thinks for the input.
Could this have been The Lure of the Basilisk by Lawrence Watt-Evans? It featured a non-human character named Garth, who rode around on a "Warbeast" which was something like an enormous panther. It eventually evolved into a trilogy, the other two books being The Seven Altars of Dusarra and The Sword of Bheleu,
