Menu tonight:

Eggplant burgers

Wash off eggplant. Peel eggplant. Slice eggplant into however thick or thin you want the burger to be.


In a bowl, mix flour with season salt, garlic powder, paprika, italian seasonings, and pepper.

In another bowl, mix eggs with season salt and italian seasonings.

Last bowl should have breadcrumbs, already seasoned

Preheat a pan with corn oil and wait until hot. Then, dip a slice of eggplant into flour, then egg, then breadcrumbs. For crunchier texture, go flour, eggs, breadcrumbs, eggs, bereadcrumbs


Fry until golden brown each side

Serve on toasted buns and build your burger

I suggest spreading tomato sauce and mozzerella chesse on the burger then putting it under a broiler. Or in the oven or microwave until cheese melts
