I love how every meal comes with a stack of tortilla and refried beans.

I could quite happily just have the beans and tortilla for my meal.

You know those refried beans you can get in a can? They're rubbish.

Frijoles refritos con grasa de tocino.

When I was a kid, the bacon grease was poured into a jar. It was used to fry the mashed beans. 'Re' means very rather than again in this context. Beans with bacon grease are amazing.

Even beans that were just being cooked for the first time after soaking had an onion and a dollop of bacon grease added.

In my childhood, the fresh tortillas came in a huge basket on the back of a bike; they were still warm (the ones in the middle of the stack) when we got home from school.

We always saved bacon grease and the fat from the Sunday joint. It was used for any other frying during the week - or the dripping was used to spread on our bread. We used to fight over who would have the lovely. brown. tasty. jelly bits.

I crave that stuff - and it's so very bad for me to eat carbs like that.
