There are 4 time-travel safari stories in there, those dinosaurs are real, and exist in the past - not engineered dinos, existing in the near-future.

I'm pretty sure this was a short-story. Was about engineered dinosaurs that they were using for profit (entertainment, maybe?). Big boys, kept in large cages. Written from the wrangler's POV. The handlers had shotguns(?) - and animal protesters were unhappy, and broke in to 'free' the dinosaurs. You can see where this is going, amirite? (view spoiler)[The herbivore, not the T.Rex, was the one that killed the protester(s) (hide spoiler)]
