There was a movie called "Poldark" made in 1996 that was based on The Stranger From The Sea. If one were to get access to it, Cuby's name pronunciation would be confirmed!

I found a series of clips from the movie based on this book. Here is the link to a meeting between Jeremy and Cuby, in which Jeremy says her name twice. At least those involved in making this movie thought Cuby rhymed with Ruby!
