I retract Pretty As You Please by the Ass Ponys (even though they're one of the top three bands that has ever existed in my opinion). We've already got the murder tune covered.
I'd like to suggest a good ol' prog rock number in honor of the sarcastic underbelly that is this group--Time and a Word by Yes.

'The Future' I find intense and chilling... and love Teddy Thompson's cover of it.

I am mesmerized by the Fairport Convention version of "Suzanne". And their "Tam Lin" which I didn't at first like, but my roommate kept playing it, and it grew on me.
I had a similar experience with "Kashmir" by Led Zepellin. As a freshman, the guy next door to mine in the dorm decided that was the perfect song to blast every morning at 6:00 a.m. to wake up to.
It seems like Cohen is a bit like Dylan - the covers are often better than the original versions.
