I know! Even if it is third person from Harry's, I think we would know if George and Angelina had something going on.

You think? Harry wasn't that clued up when it came to relationships ;)
Besides, they wouldn't have got married until years after the end of the story. (Though obviously before the epilogue.) There was plenty of time for a relationship to develop then even if there wasn't anything going on at school. They were in the same year at school by the way so they would have had most of their classes together as well as being on the Quidditch team.

Ghosts only come back when they have unfinished business from their live form. I'd say that Fred was pretty satisfied with his pranks, but since 'unfinished business' is so vague, literally anyone could come back as a ghost.
I was thoroughly... inflamed (lol that's a fun word; I was pissed), but as a fellow writer, maybe she felt that nothing she wrote would be able to do the scene justice. I mean, they were attached at the hip, partners-in-crime, two peas in a pod, types of tight-knit. I've omitted scenes in my stories before for that particular reason.
