What do you do when you have too many plots that you want to write or things that you started but haven't finished?

This is personally a problem for me - I have 6 plots I can write and I've started two, but there's one I really want to write and don't know what to do with!

This is a feature not a bug in the system. As a writer, you want to have multiple concepts, because if you are not feeling into one, you can switch to another. You will never tell all of the stories in your head. That's one of the drawbacks of imagination.

*Grumble* but I don't know which to work with! Ugghhh I want to write all of them!

Try doing that. It's good practice. A few years ago I decided to try writing two books at the same time. I set a goal of 4,000 words for each one before switching to the other. It wasn't easy, but I learned how to focus.
