The Kobo 123 number goes in the ISBN13 field also

Add all editions with unique identifiers; then either combine the editions yourself or ask a librarian to do for you. Or just post all the edition information and librarians will do all of it—however you prefer.
(if the nook and kobo version share the same identifier isbn13 978# only add one ebook edition with the 978# in the isbn13 field. Add two editions if the nook has a unique bnid identifier starting with 294# that is one edition with bnid in the goodreads isbn13 field and if the kobo edition has an id starting with 123# that's another edition with kobo id being put in the goodreads isbn13 field. In either case, format=ebook.)
How much is too much? I wouldn't worry; most readers on goodreads are used to all the editions. Some happily just shelve whatever edition shows up when searching title or author and others are extremely picky to shelve the exact edition they purchased or shelve (for the picky ones, if the editions aren't created they are likely to add themselves, not necessarily as correctly as an author or librarian would).
