SOLVED. childrens book of short stories that are magical

" The book full of short stories, poems, songs and beautiful illustrations. Read in the 00's, could possibly be from the 90's not certain.

I can't remember the full content but it contained things like:
- children seeing a unicorn go through a mirror and following it through to this magical land.
- a fairy who created water droplets on plants in the forest next to a river.
- a fairy who changed the seasons.
- a mermaid who was sitting on a rock, brushing her hair and a human saw her.
- illustrations of fairies living in mushrooms in a mushroom village that was on a hill.
- humans befriend fairies and the fairies show them around, they end up flying in the air on a horse and cart.

I can't remember any poems or songs from the book

Yes, I had her whole collection it seems! I've been wanting to find these for ages for my own daughter to enjoy as I loved these so much growing up, I can not thank you enough
