The aunt is telling the story in these. The mouse's name is Penelope, which may be where the name Nell comes from.

The story is a grandmother mouse telling her granddaughter a story, about a mouse named (I'm pretty sure) Nell. The princess gets kidnapped or lost and then kidnapped, and I think is kept in a cave. There are two kidnappers, one is definitely a bat and the other is either a porcupine or a mole (I'm leaning towards mole) or something similar.
I think there is also a boy mouse, who helps rescue the princess, but I'm a little fuzzy on that part. During the rescue echoes in the cave are used to confuse the bat. I also remember the granddaughter interrupting the grandmother's story because she frightened.
I think the cover might have a pink border.
The illustrations for the book are really detailed and the story is well-crafted, I helped adapt it into a short play for a drama class in high school and am really hoping to find it again.
I've already looked through the Children's Picture Books With Beautiful illustrations listopia and didn't see it, but I was mostly skimming so possibly missed it.
