You can make the new one into the default.

This is the procedure for setting the default edition of a book:
i) Go to the book page of the edition you wish to become the default/primary edition.
ii) Click "edit details" below the book's description.
iii) On the right side of the page about halfway down, click "Set this book as the primary edition for this work".
iv) Click "Save Changes"

I believe this is only something the author (i.e. Scott) can do as the option doesn't come up on the librarian edit page.

That is correct. Only the author or Goodreads staff can do it. On a book with several authors only the primary author can change it. Scott is the author.
