The obvious would be MaryJanice Davidson's Undead series - the books start with U. Other ideas would be Courtney Milan's Turner series, starting with Unveiled. There is Unwrapped and Unraveled by Jaci Burton. Or Understood, Overheard and Undenied by Maya Banks - you can use all because the series name will work too. Anything by Madeleine Urban or Madeleine Urban Abigail Roux. Untamed by Elizabeth Lowell is the beginning of a trilogy. Under Her Skin by Susan Mallery is also the beginning of a series as is Undertow by Cherry Adair. Untouched by Anna Campbell, Untouched by Samantha Hunter, Until There Was You by Kristin Higgins and Up Close and Dangerous by Linda Howard are stand-alones. I have several more that are in the middle of series like Unlawful Contact and Untamed by Pamela Clare or Unleashed by Jami Alden or even Under the Mistletoe by Jill Shalvis. I even have a few more on my shelves!
