Sir Richard Francis Burton's books
Shackelton: His Antarctic Writings
Mawson: And the Ice Men of the Heroic Age: Scott, Shackleton and Amundsen
Mawson: And the Ice Men of the Heroic Age: Scott, Shackleton and Amundsen

Swimming to Antarctica: Tales of a Long-Distance Swimmer
Ice Bound: A Doctor's Incredible Battle for Survival at the South Pole
In a Sunburned Country

The Places in Between
Into thin Air
The Scramble for Africa

My father also enjoyed the Aubrey-Maturin series by Patrick O'Brien, which are the books Master and Commander were based on.

For the brother-in-law: Endurance (about Shackleton expedition)
The Worst Journey in the World by Cherry-Garrard (might have that name spelled wrong) - about part of Scott's expedition that split off to go watch the wintertime penguin rookeries - just amazing
A Walk in the Woods by Bill Bryson - true and also very funny account of hiking the Appalachian trail
