And I would argue Taltos by Steven Brust can be read as a stand alone novel (it's actually book 4 of a series, but I started with that one).

I wouldn't really call it fantasy either, though there are dream sequences/visions (all that druid stuff) but there's no proof that it was magic versus smoking some interesting herbs. But if you still want to call it magic, it's a very minor part of the story and fantasy fans might be disappointed at the lack of it. It's a good historical series though.
      Tigana by Guy Gavriel KayYsabel also by Guy Gavriel Kay are two that come to mind. Also makes me realise most fantasy I've read seems to be a part of a series.

I have also really enjoyed Guy Gavriel Kay's books.

While Best Served Cold (and The Heroes and Red Country for that matter) can be read as a stand alone, I would argue that they are far more enjoyable after having finished The First Law trilogy. It's in the same world, and it has a lot of recurring characters from that series.
      I had a hard time coming up with stand alone fantasy books in general. You're right about the First Laws Trilogy.
