Susan (susayq ~) (susayq) | 6062 comments Leslie, here's the sloppy Joe recipe. Sorry it took so long...

Zesty Sloppy Joes

4 pounds ground beef
1 cup chopped onion
1 cup finely chopped green pepper
2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
1 can (15 ounces) thick and zesty tomato sauce
1 can (8 ounces) tomato sauce
3/4 cup packed brown sugar
1/4 cup ketchup
3 tablespoons Worcestershire sauce
1 tablespoon prepared mustard
1 tablespoon ground mustard
1 teaspoon chili powder
1 teaspoon garlic salt
20 to 25 hamburger buns

Directions
In a large saucepan or Dutch oven, cook beef and onion over medium heat until meat is no longer pink. Add green pepper. Cook and stir for 5 minutes; drain. Add the next 10 ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour, stirring occasionally. Serve on buns. Yield: 20-25 servings.

I use 2 pounds of meat, not 4 LOL and I omit the mustard and soup.

ShoSho (shoshost) | 12263 comments I got all the stuff to make jumbalaya tonight and a dish called tas kebab that is one of my dad's favorite for tomorrow night. I'll give you the recipe tomorrow in the recipe thread,it's easy and tasty.

message 57: by Susan (susayq ~), Moderator (new)

Susan (susayq ~) (susayq) | 6062 comments I may make jambalaya this week. You're the second person to mention it to me in two days lol we're having a baked pasta florentine dish tonight.

I've been slacking on my menu planning :( I probably haven't done one since January. I try to plan for 2-3 weeks at a time. I find we eat better when I plan and I spend less money at the grocery store. Do y'all menu plan?

message 58: by Susan (susayq ~), Moderator (new)

Susan (susayq ~) (susayq) | 6062 comments Oh! And yay for a new recipe to try!

I never plan like that but when I go grocery shopping I get the ingredient for the dished I'm likely to make during the week. It usually depends on specials in the store.

~Leslie~ (akareadingmachine) | 845 comments Thanks for the sloppy joe recipe, Susan! I'm definitely trying that. My recent success was Chicken Spaghetti. It was amazing! Also, I'm about to leave to go out of town for awhile and I'm making jambalaya for my husband and daughter that they can eat on all week. I mix a box with other ingredients and it comes out so good.

Susan (susayq ~) (susayq) | 6062 comments the ribs sound good, Jenny!

Leslie, I love chicken spaghetti. My mom puts a little tasso in it and YUM-ME!

message 62: by ~Leslie~ (new)

~Leslie~ (akareadingmachine) | 845 comments Tasso - yum!! I have a friend who makes it, but I've never done it before. Someone sent me a recipe and after doctoring it a little - I made it and it was amazing!

Just got home from Mass and made jambalaya. Turned out so good!! Great suggestion!!

Susan (susayq ~) (susayq) | 6062 comments How do you make Tasso? I can't buy it up here so making it would be great!

I love a dish that its name starts with whatever:!!!

it was pretty good and I quote hubby here "this was the best steak you've ever made" !!!

message 67: by Susan (susayq ~), Moderator (new)

Susan (susayq ~) (susayq) | 6062 comments That's a great compliment from your Hubby!

I love Wednesday nights. I don't have to cook and we still get a homecooked meal. Last week it was chicken strips and a baked potato. Depending on which group is cooking we will either get some kind of grilled meat (chicken or pork) or lasagna (that group hasn't had a turn for a while).

Sorry, run on thought. I just buy tasso. I have a friend who makes chicken spaghetti! It's not too easy to find in Shreveport either. I have to go to grocery stores that have specialty sections. I found this though. Us south Louisianans have to stick together!

Emeril Lagasse Tasso Recipe

By the way, my chicken spaghetti turned out amazing!

Talking about it made me want it so I made some today LOL I put some sausage in it since I didn't have tasso ;) I also put it in the crockpot before I went to school this morning. my house smelled SOOOO good this afternoon.

message 70: by Lisa Kay, Moderator (new)

Lisa Kay (lisakayalicemaria) | 20787 comments Sooooooooo... what are you cooking this holiday?

I had my menu all done for Christmas Eve and I got a call today that someone is bringing lobster. I haven't made it in years, and then only with my husband.

I have stuffed salmon - stuffed with crab - planned. (Yes, though I've gone vegan, I do eat meat or fish for holidays.) Nevertheless, everything else will be vegan.

message 71: by Susan (susayq ~), Moderator (new)

Susan (susayq ~) (susayq) | 6062 comments The stuffed salmon sounds good, Lisa Kay! I was informed yesterday that my mother-in-law has decided she wants Christmas dinner at her house this year. She had back surgery earlier in the year, after several years of suffering, and hasn't hosted a Christmas dinner in about 3 years. So, I only have to bring a vegetable casserole so my Hubs will be happy lol

I do have a meal of pork chops with mashed potatoes and gravy planned for during the week though. My daughter who had a birthday this month requested it as her late birthday dinner :)

message 72: by Sandra J (new)

Sandra J Weaver (sandraweaver) | 361 comments The big family get together is at my middle sister's house on Christmas Eve, so my Christmas dinner the next day is a small one-just my youngest sister and my son in addition to my husband and myself. Every year I make the same thing: roast beef, mashed potatoes and gravy, roasted carrots, a salad of some sort (probably cauliflower this year), rolls, and red velvet cake and/or cookies for dessert. Then we'll lay around in something of a stupor for awhile.

Phoenix (Online Elf) | 4358 comments Peppermint fudge red velvet cake? I'm stopping by for dessert, babe.

message 74: by Sandra J (new)

Sandra J Weaver (sandraweaver) | 361 comments No peppermint, but otherwise that's it. One of my husband's favs. I'll eat cookies probably. Unfortunately, I can't pass up cookies. Cookies with a nice cup of coffee or tea in the afternoon with whatever I happen to be reading-the best!

Hayley (mrsjohnson1985) | 718 comments Since I haven't been in this thread in awhile, I thought I'd post a new recent recipe that I've been loving :)

Mexican Stuffed Shells
Ingredients:
16-18 jumbo pasta shells
1 lb. lean ground beef
1 package taco seasoning
4 oz. {1/2 block} cream cheese
1 & 1/2 cup salsa
1 & 1/4 cup taco sauce
2 cups cheddar-monterey jack blend cheese, shredded

Directions:
Preheat oven to 350°F.
Fill a medium size pot with water and bring to a boil.
Add the shells and cook until al dente. {I like to be a lot more on the harder side because I've found that they rip if they are too soft and they still keep cooking later on.}
Once they are done, drain and run under cool water.
While the shells are cooking, brown the meat in a large skillet.
Add the taco seasoning, according to package directions.
Add cream cheese, cover, and let simmer until cream cheese is completely melted and then stir well.
Pour salsa into a 9x13 inch dish.
Scoop a spoonful of meat mixture into each shell and place in pan.
Repeat until all shells are used. {Or until you run out of mixture.}
Spread taco sauce evenly over shells. {Make sure to cover each shell completely to prevent them from drying out while cooking.}
Cover with aluminum foil and bake for 27-30 minutes.
After baking, spread shredded cheese evenly over shells and bake for 9-11 more minutes, uncovered.
Top with desired toppings - green onions, black olives, sour cream, etc.

I tried posting a picture but I guess my internet is not working properly because it won't show any images at all :(

I don't think I could not eat meat.... I try to incorporate more chicken and fish into my life though instead of red meat since it's not the greatest for ya.

Do you like Tomato Soup?

Lisa Kay (lisakayalicemaria) | 20787 comments Cooking week-end for me, too. ...although, in an "extended stay" hotel. Still...better than nothing. Trying not to buy a lot of things before my move (less to pack), but I do keep adding to my pantry and kitchen tools here.
