Zesty Sloppy Joes
4 pounds ground beef
1 cup chopped onion
1 cup finely chopped green pepper
2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
1 can (15 ounces) thick and zesty tomato sauce
1 can (8 ounces) tomato sauce
3/4 cup packed brown sugar
1/4 cup ketchup
3 tablespoons Worcestershire sauce
1 tablespoon prepared mustard
1 tablespoon ground mustard
1 teaspoon chili powder
1 teaspoon garlic salt
20 to 25 hamburger buns
Directions
In a large saucepan or Dutch oven, cook beef and onion over medium heat until meat is no longer pink. Add green pepper. Cook and stir for 5 minutes; drain. Add the next 10 ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour, stirring occasionally. Serve on buns. Yield: 20-25 servings.
I use 2 pounds of meat, not 4 LOL and I omit the mustard and soup.


I've been slacking on my menu planning :( I probably haven't done one since January. I try to plan for 2-3 weeks at a time. I find we eat better when I plan and I spend less money at the grocery store. Do y'all menu plan?

I never plan like that but when I go grocery shopping I get the ingredient for the dished I'm likely to make during the week. It usually depends on specials in the store.


Leslie, I love chicken spaghetti. My mom puts a little tasso in it and YUM-ME!

Just got home from Mass and made jambalaya. Turned out so good!! Great suggestion!!

I love Wednesday nights. I don't have to cook and we still get a homecooked meal. Last week it was chicken strips and a baked potato. Depending on which group is cooking we will either get some kind of grilled meat (chicken or pork) or lasagna (that group hasn't had a turn for a while).

Sorry, run on thought. I just buy tasso. I have a friend who makes chicken spaghetti! It's not too easy to find in Shreveport either. I have to go to grocery stores that have specialty sections. I found this though. Us south Louisianans have to stick together!

Talking about it made me want it so I made some today LOL I put some sausage in it since I didn't have tasso ;) I also put it in the crockpot before I went to school this morning. my house smelled SOOOO good this afternoon.

I had my menu all done for Christmas Eve and I got a call today that someone is bringing lobster. I haven't made it in years, and then only with my husband.
I have stuffed salmon - stuffed with crab - planned. (Yes, though I've gone vegan, I do eat meat or fish for holidays.) Nevertheless, everything else will be vegan.

I do have a meal of pork chops with mashed potatoes and gravy planned for during the week though. My daughter who had a birthday this month requested it as her late birthday dinner :)



Mexican Stuffed Shells
Ingredients:
16-18 jumbo pasta shells
1 lb. lean ground beef
1 package taco seasoning
4 oz. {1/2 block} cream cheese
1 & 1/2 cup salsa
1 & 1/4 cup taco sauce
2 cups cheddar-monterey jack blend cheese, shredded
Directions:
Preheat oven to 350°F.
Fill a medium size pot with water and bring to a boil.
Add the shells and cook until al dente. {I like to be a lot more on the harder side because I've found that they rip if they are too soft and they still keep cooking later on.}
Once they are done, drain and run under cool water.
While the shells are cooking, brown the meat in a large skillet.
Add the taco seasoning, according to package directions.
Add cream cheese, cover, and let simmer until cream cheese is completely melted and then stir well.
Pour salsa into a 9x13 inch dish.
Scoop a spoonful of meat mixture into each shell and place in pan.
Repeat until all shells are used. {Or until you run out of mixture.}
Spread taco sauce evenly over shells. {Make sure to cover each shell completely to prevent them from drying out while cooking.}
Cover with aluminum foil and bake for 27-30 minutes.
After baking, spread shredded cheese evenly over shells and bake for 9-11 more minutes, uncovered.
Top with desired toppings - green onions, black olives, sour cream, etc.

I don't think I could not eat meat.... I try to incorporate more chicken and fish into my life though instead of red meat since it's not the greatest for ya.
