I feel like Bilbo is the only one who grows a lot. It is done with expert timing. I also think that Balin grew some, because he liked Bilbo and defended him as the story progressed. He was the only dwarf who changed in a positive way. I feel that Gollum and Smaug are one in the same. They both deal in greed. Gollum guarded his precious ring, and Smaug guarded all of his dwarf loot.
