Jim (jimmaclachlan) We have a new horse with blue eyes & a great disposition, despite being named Nitro. He let me slap several big horse flies off him at our first meeting & let Marg put a fly sheet on him without batting an eye. She has him on trial for a few weeks to see if he'll work out. So far, so good.

He's a 10 year old Paint, white with black markings, about 15h. Not sure what his pattern is called. I've never really understood the difference between tobino & overo, although he's certainly not a rabicano (sabino?) if I even have the names right. I guess I'll get some pictures tomorrow & try to figure it out with Marg. His papers will say, but we won't get them until Marg decides whether or not to keep him.

I'm voting for renaming "Dicey's Sunny Bar" (aka Nitro) to "Sunny" considering his disposition. (I have no idea where he picked up that nickname.) The only fly in the ointment is that my practically perfect pony, Chip, wants to kick his ass.

Horses can be such asses.

The big horseflies are really out in force now. Luckily, they're slow enough that I can usually catch them pretty easily, but they're driving the horses nuts. The horses see us out in the field & run over to us to get them off. If you didn't know better, you'd think they were going to run us down the way they charge over. I did wind up punching Chip for trying to climb into my lap. He's big for such cuddling & I was attempting to stand at the time, so it really wasn't working out.

Jim (jimmaclachlan) Marg got a new horse today, a 15.1h black Quarter horse. He's 4 years old, green as grass, but brave & nice. Chip is being a jerk, as usual.

Quinn, Mel (short for Mel Gibson, AKA Braveheart), & some others have fallen by the wayside. No famous mare names allowed either, e.g. Black Caviar or Zenyatta.

I think the name "JET" is perfect!

Jim (jimmaclachlan) She doesn't like any names so far. We're kicking around Maverick (Mav for short?) since he's kind of a rascal. We're also thinking of Mal for Captain Mal of the Firefly. Neither clicks for me.

We had a dog named Maverick. He was half wild German Shepard mix & half Great Dane. Looked like a really big German Shepard. He was hell on ground hogs & coons, killing even the biggest with a single crunch, but would lay next to a lost chick, whine & do a low howl until the mother or one of us took care of it. When Chance, Mom's Golden Retriever, had puppies, she got up in the middle to chase a fox. Mav stayed with the pups & licked them off. Chance didn't mind at all.

Jim (jimmaclachlan) Joy, Marg looked on a bunch of different web sites for horses, then drove all around KY looking at them. There are sites just for swapping horses - DreamHorse & some others. You can sort by area, breed, price, age & such.

Nina | 6069 comments The only thing that I might like more than driving around to find as new horse is looking for an Irish setter, but those days are behind me. It was fun while it lasted, though.

Jim (jimmaclachlan) I just finished spending 20 minutes herding a Momma Skunk & her 3 kits off our property. Speedy helped, although one kit suddenly charged back at him. I pushed him back & the little bugger sprayed me across the shins. That earned me an attempted field goal with him playing the football. I tossed him over the fence & he passed the rest of his family, but wasn't moving. He was gone before I finished washing up, so no damage done.

Unfortunately, I think they went to ground in the pipe under the end of our lane. I hope they don't move into our woods tonight. The dogs will find them & that means dead skunks & stinky dogs.

Werner Barb and I went for breakfast at Ryan's in Princeton (WV, not NJ :-) ) today to celebrate our anniversary. (Thursday was the actual day, but I had to work.) We've been blessed with 33 wonderful years together!

Jim, I enjoyed reading about your horses and animals. What happened to Nitro? Did you keep him? This is the first time I've read your post about him. I missed it before. Gee, BLUE EYES! It's great the way you can find horses to buy on the Internet. Just like dogs and everything else nowadays.

I love the way your horses come to you to get rid of the flies!

Sorry I haven't been here for a while. As I mentioned elsewhere, Goodreads isn't sending me email notifications. I'm going to look into that.

Meanwhile, I've been recovering from a fall in which I hurt my rib. My foot had fallen asleep and when I got up out of the chair and tried to walk, it was as if my leg wasn't there! So over I went and my rib hit the hard round metal edge of a side table. OUCH! I have pain when I move, cough, or sneeze. The pain is similar to a burning feeling on my rib. The doctor prescribed medicine for the pain but it makes me sleepy.

Jim (jimmaclachlan) Nitro went back home, but now we have Indigo, Indy for short. Marg says he reminds her of Blue & is very happy with him.

Sorry to hear about the fall & the ribs, Joy! They're a bear & take forever to heal. Even when they do, they get you for weeks after when you move the wrong way. Heal up quickly!!!

No one is impressed by my skunk herding? Sheesh! How many skunk herders do you know?

Jim (jimmaclachlan) Yes, Indy is the dark horse. Actually a dark brown, not black. I thought he was black, but I was wrong.

No stink. I had on shorts, so a bit of dishwashing liquid soap & a quick scrub made me fit for human company in no time.

Nina | 6069 comments Oh,Joy I am so sorry as I know from what I've heard, ribs hurting is not fun; quite painful. I wasn't quite as unlucky as you but once I was reading loads of mail after returning from a trip and when I stood, oops, no feeling in my leg, as you said so I sprained me ankle. Just turned over. Hope your ribs heal soon.

Nina, thank you for your wishes. About the leg falling asleep and causing a fall, it happened to me twice before this, about a year or so ago. But at that time I fell on a soft rug and no harm was done. My son has advised me to be sure that "all systems are go" before I do any moving in the future. :) Good advice!

The pain really limits my getting things done. Very frustrating!

Werner Jim, I am impressed by your skunk herding; you're braver than I would be! I know skunks only use their stink-squirting glands in self-defense, when they feel that they're threatened; but I'd be afraid that they wouldn't recognize my intentions as benevolent. :-)

Despite their formidable defensive weapon, Barb and I both think skunks are one of the most beautiful animals there are. When Rebekah was an infant, we used to call her our "little skunk" as an endearment. (I know, we're weird. :-) )

Jim (jimmaclachlan) Thanks, Werner. I was surprised that Momma wasn't more defensive. She seemed to understand & just moved off. It was just Speedy crowding that one little kit that set him off.

Skunks can be stubborn. Marg had one spray her bus. It was in the middle of the road & just turned tail & blasted as she drove down the road. She went right over him without hurting him, though. The bus was a bit stinky for a while.

Thank you, Mary JL. My rib still hurts! And all my muscles are trying to compensate for my incapacities. So the muscles hurt too! Can't get to my chores. Things get messier everyday! LOL

Mary JL, it's so true that when the pain finally goes away, you feel like a new person! I guess the pain helps us to appreciate our good days.

Jim (jimmaclachlan) Another friend posted an eggplant parmesan recipe & still another posted an applesauce bread recipe. I'm gonna get fat!

Applesauce Bread

1/2 cup of softened butter
1 large egg
1 1/2 t baking soda
3/4 t nutmeg
1 cup sugar
1 1/2 cups of flour
1 t ground cinnamon
1/2 t kosher salt
1 1/2 cups of applesauce
1 t vanilla extract

In a large bowl, first blend together the butter, egg, & sugar. Then add the flour, baking soda, spices, & salt.
After it starts to from a crumbly dough, pour in the applesauce and mix together. I used two small loaf pans, pouring mixture evenly into both. Bake at 350 degrees for about 40 minutes.

Eggplant Parmesan - 8 to 10 servings
3 eggplant, peeled and thinly sliced
2 eggs, beaten
4 cups Italian seasoned bread crumbs
6 cups spaghetti sauce, divided
1 (16 ounce) package mozzarella shredded cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon dried basil

Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated (350) oven for 5 minutes on each side.

In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.

Bake in preheated 350 degree oven for 35 minutes, or until golden brown.

Joy H. (joyofglensfalls) | 16697 comments Jim, about the eggplant slices, my mother used to press them in towels before frying them. I think that was done to remove the bitter taste of the eggplant juices. Have you heard of that?

Pressing the eggplant also collapses some of the eggplant’s air cells, so it absorbs less oil if it’s sautéed."

Nina | 6069 comments More news; they are taking care of the water in the walls problem; one thousand plus. And the kitchen floor has to be taken up. The miracle is that this happened the day our company left not when they arrived or while they were here visiting and sleeping in that room. It wasn't a pipe that the mice chewed; it was a bag that keeps the water from draining out after the dishes are washed. They chewed in four different places.

Jim (jimmaclachlan) Nina, I made the egg plant parmesan using your recipe, pretty much. The only difference was I cooked down my own tomatoes for the sauce, so it was a little runny. I cooked it for about 40 minutes in the oven. It was excellent! Thanks!!!

Joy, that salting did get all the bitterness out of the egg plant & also meant I didn't need to add any salt to the fresh tomatoes.
