The book is a series about a girl she gets kidnapped by a dark angel while going up a hill to collect some sort of nectar for her mistress. The dark angel takes her to some castle and she has to take care of the Place including its griffins/gargoyles which are his enslaved pets.
Starting from here i am probably gonna mess up the order,but she saves him by cuts open her own heart and gives it to him. But there a gardner? Who takes the heart that she cuts out from the dark angel hold it over the fire and melts away the lead and put it in the girl. The girl and angel wakes up and angel is now a boy again. The make a sail from his wings and sail over a dust sea and return to his home. There some more books affter that and she goes on more adventure and thers mention of whale barf a giant pilkar of light, jackals, a magical fruit. Finding all the gargoyles/ grffins again

You had the name in the synopsis! It's the Darkangel by Meredith Pierce. Sequels are A Gathering Of Gargoyles and The Pearl At The Soul Of The World.
