I don't know many books set in Hong Kong, but a couple of books that I read were great:

Love in a Fallen City by Eileen Chang (which we read as a book group a couple of years ago)

Falling Leaves by Adeline Yen Mah (a memoir)

Hock Tjoa (hockgtjoa) Taipan was set in Hong Kong I think as well as the more famous Nobel House. But Hong Kong reminds me of what the old English adventurers called FILTH--Failed In London, Try Hongkong.
