I think it was a crucial symbol - when Lumbly tells Cora to look out during her journey to see the real face of America, and all that you can see underground is darkness, that is a potent metaphor American's dark heart - slavery, Manifest Destiny, treatment of Native Americans; and at the same time it holds the possibility to carve a new place into it, to dig through until you reach the light. Because the characters can't really find the light in the America they inhabit - they realise they will have to dig the tunnel to it themselves.(less)
